Mon Iaio Sisco Origen

Harvest and manual selection. Fermentation and maceration for 15-20 days at 24°C with two daily pump-overs.

Aging in third and fourth year 225 litre French and American oak barrels for 6 months, plus 6 months of extra aging in the bottle.
