Pét-Nat Xarel·lo

A 100% Xarel·lo from a single vinyard, this sparkling wine elaborated in the ancestral method (pét-nat) boasts a rich palatte of floral notes and citrus aromas.
With 12 months of aging on the lees, Pét-Nat Xarel·lo is a biodynamic sparkling wine of minimal intervention for all the pét-nat lovers out there

- Food pairing recommendations: Ideal as an aperitif, it also pairs well with all kinds of seafood, assorted salads, and light dishes.
- Serving temperature: Serve between 6ºC and 8ºC.

Manual harvest in hand-picked in boxes. Very gentle pressing at low pressure, short peculiar maceration and extraction of the free-run juice (45-50%).
Fermentation in small tanks at a controlled temperature, which finishes in the bottle and ages on the lees for a period of 12 months.
Organic viticulture and elaborated 100% with grapes from the winery's estate vineyards.
