Harvest & Vinification:
100% organic viticulture. Grapes are hand-harvested in the cool morning hours and transported in small 15kg boxes to ensure freshness. Upon arrival, they undergo a short skin-contact maceration at a low temperature to maximize aroma extraction.
Fermentation & Aging:
Fermentation occurs in stainless steel tanks at controlled temperature. The wine is then aged on its lees (sur lie) for 2 months to add body and texture. No malolactic fermentation is performed, which helps maintain high acidity and freshness.
